  • 2 cups of rice- 1 cup of red kidney beans.
  • 2 cups of coconut milk
  • 4 chicken thighs, seasoned
  • 1 onion, diced- 2 cloves of garlic, minced
  • 1 bell pepper, chopped
  • 1 sprig of thyme
  • 1 teaspoon of Belizean recado (achiote paste)
  • Salt and pepper to taste

Instructions:

  1. Rinse the rice and beans separately.
  2. In a pot, combine rice, beans, coconut milk, and salt. Cook until rice is tender.
  3. In a separate pot, sauté onions, garlic, and bell pepper until softened.
  4. Add seasoned chicken, thyme, and recado. Cook until chicken is browned.
  5. Combine the rice and beans with the stewed chicken, and simmer until flavors meld.
  6. Serve hot and enjoy the Belizean national dish!

Ingredients:

  • 3 cups of all-purpose flour

  3. Divide the dough into balls and roll them into flat discs.
  4. Heat oil in a pan and fry each disc until golden brown.

Ingredients:

  • 1 pound of conch, cleaned and diced.
  • 1 cup of tomatoes, diced
